Lillian may not have been allowed around ninjas proper as a youth, but she definitely knows they existed and definitely is aware of subterfuge and sabotage as a thing that might be worth worrying about. In this case, however, she's less insulted and more kind of amused that he'd watch her so closely. Poison would not at all be her method of trying to do someone in.
